This recipe is a part of my Global Vegan Challenge where each week I research and develop a recipe from a different country in the world. Many of these recipes are veganized based off their omnivore counterparts. While not all of these recipes are a one for one what you’ll find in their country, I hope you’ll still find them delicious!

- I had a hard time finding bambara beans, but I was able to find them here from this Etsy shop. They’re super delicious and creamy, so it’s hard to find a replacement. Black eyed peas are probably the closest visually, but are pretty different.

Directions
- Rinse beans and place in a bowl covered with water. Allow to soak for at least 8 hours or overnight.
- Once beans are finished soaking add to a pot with 6 cups of water and salt. Cover and bring to a simmer. Stir periodically, adding additional water as needed. Simmer for about 1 1/2 hours.
- Add raw peanuts to the pot. Allow to simmer for 30 more minutes, adding additional water as needed to prevent burning.
- Taste test. Add additional salt if needed.
- Remove pot from heat. Enjoy immediately hot.
