Vegan Loaded Nachos

Ingredients

  • 1 batch Vegan Queso

  • 1 bag Yellow or Blue Corn Chips

  • 7 ounces Vegan Ground Beef (I use Gardein or Beyond Meat Crumbles)

  • 15 ounces Canned Black Beans

  • 2 Vine Tomatoes

  • 2 Green Onions

  • 1 Yellow Onion

  • 1 Avocado

  • 1 – 2 Jalapenos

  • 1 Lime

  • 1/4 cup Cilantro, packed

  • 2 tablespoons Vegetable Oil

  • 1 teaspoon Ground Cumin

  • 1 teaspoon Oregano

  • 1 teaspoon Paprika

  • 1 teaspoon Granulated Onion

  • 1 teaspoon Granulated Garlic

  • 1/2 teaspoon Chipotle Powder

  • 1/2 teaspoon Pepper

  • 1/2 teaspoon Salt

Directions

  • Drain can of black beans. Rinse and set aside in a large mixing bowl.
  • Dice tomatoes, onion, and green onion. Add to mixing bowl.
  • Mince or slice jalapeno thinly. Mince cilantro until you have 1/4 cup, packed tightly. Add to mixing bowl and mix all ingredients until well incorporated. Set aside.
  • Add batch of vegan queso to a sauce pan. Warm on low, stirring occasionally.
  • Heat a saute pan on medium high heat. Once warmed add vegetable oil and saute vegan ground beef with cumin, oregano, granulated garlic, granulated onion, chipotle powder, pepper, and salt until hot. Once cooked through and hot keep warm over low heat, stirring occasionally.
  • Slice lime into wedges, and slice avocado into thin slices. Set aside.
  • To assemble, find a large plate or baking dish. Pour a small lade of the queso onto the plate and spread around. Add a layer of corn chips, drizzle queso, sprinkle vegan ground beef, sprinkle topping mixture, and a add a couple of slices of avocado. Repeat with corn chips, queso, vegan ground beef, topping mixture, and avocado until you run out of ingredients.
  • Serve loaded nachos warm with lime wedges, squeeze over loaded nachos to taste. Enjoy!
