Slaai (Week 63, Eswatini)

This recipe is a part of my Global Vegan Challenge where each week I research and develop a recipe from a different country in the world. Many of these recipes are veganized based off their omnivore counterparts. While not all of these recipes are a one for one what you’ll find in their country, I hope you’ll still find them delicious!

  • I’ve seen variations of this recipe with and without lettuce so choose your own adventure! It seems that slaai can be prepared a variety of ways so I tried to narrow it down to the ingredients I’ve seen the most consistently.

Ingredients

  • 3 Avocados

  • 1 cup Peanuts, crushed

  • 1 cup Radishes

  • 3 tablespoons Lemon Juice

  • 1 teaspoon Ginger, grated fresh

  • Salt, to taste

Directions

  • Slice radish super thin, micro plane ginger, crush peanuts, and dice avocado. Add to a bowl with lemon juice and toss.
  • Slowly salt to taste until desired saltiness is reached. Serve immediately.
