Mutakura (Week 85, Zimbabwe)

This recipe is a part of my Global Vegan Challenge where each week I research and develop a recipe from a different country in the world. Many of these recipes are veganized based off their omnivore counterparts. While not all of these recipes are a one for one what you’ll find in their country, I hope you’ll still find them delicious!

  • I had a hard time finding bambara beans, but I was able to find them here from this Etsy shop. They’re super delicious and creamy, so it’s hard to find a replacement. Black eyed peas are probably the closest visually, but are pretty different.

4 to 6 servings

5 minutes + Overnight Soak

Cooking time

120 minutes

Ingredients

  • 6 to 12 cups Waters

  • 1 cup Bambara Beans, dried

  • 1 cup Raw Peanuts

  • 1 1/2 teaspoon Salt

Directions

  • Rinse beans and place in a bowl covered with water. Allow to soak for at least 8 hours or overnight.
  • Once beans are finished soaking add to a pot with 6 cups of water and salt. Cover and bring to a simmer. Stir periodically, adding additional water as needed. Simmer for about 1 1/2 hours.
  • Add raw peanuts to the pot. Allow to simmer for 30 more minutes, adding additional water as needed to prevent burning.
  • Taste test. Add additional salt if needed.
  • Remove pot from heat. Enjoy immediately hot.
