Daraba (Week 35, Chad)

This recipe is a part of my Global Vegan Challenge where each week I research and develop a recipe from a different country in the world. Many of these recipes are veganized based off their omnivore counterparts. While not all of these recipes are a one for one what you’ll find in their country, I hope you’ll still find them delicious!


Recipe Notes

  • Daraba is a great stew you can easily make with pretty much any leftover produce you have. What I’ve consistently found in the dish has been okra, eggplant, sweet potato, peanut butter, and leafy greens of some sort. This dish was largely comprised of what I had on hand, so feel welcome to play around a bit with other ingredients.
  • Keep an eye on the okra when you add it towards the end. You don’t want to overcook it. Mine cooked in 10 minutes but if your stock is really hot it could cook in 5.
  • I didn’t need to add salt to this dish because my vegetable broth was already very salty. If your vegetable broth is not very salty start with a half teaspoon and add more as needed.

Ingredients

  • 8 cups Vegetable Broth

  • 5 cups of Leafy Greens (I used 4 cups of Swiss chard and 1 cup of carrot greens)

  • 2 cups Eggplant

  • 2 cups Okra

  • 2 cups Sweet Potato

  • 1 cup Carrots

  • 1 cup Shallots

  • 1/2 cup Smooth Peanut Butter

  • 3 Roma Tomatoes

  • 2 to 3 teaspoons Chipotle Powder

  • 1/2 teaspoon Black Pepper

  • Salt (as needed)

Directions

  • Prepare produce. Peel sweet potato. Slice sweet potato and eggplant into 1/2 inch chunks.
  • Cut ends of carrots and okra and slice into 1/4 inch coins.
  • Slice shallots into rings.
  • Dice tomatoes.
  • Tear leafy greens into bite sized pieces. Set aside.
  • Add all produce except for your okra and leafy greens to a pot. Add chipotle powder and pepper. Bring to a low simmer and allow to cook for 20 minutes.
  • After 20 minutes add okra. Allow to simmer for 10 more minutes.
  • After 10 minutes turn off heat. Remove about 1 cup of vegetable broth and whisk it in a bowl with peanut butter until smooth. Add vegetable broth and peanut butter mixture back to the pot.
  • Add leafy greens to the pot and mix well. Taste test broth and add salt as needed. Enjoy hot.
