Chapati (Week 15, Kenya)

This recipe is a part of my Global Vegan Challenge where each week I research and develop a recipe from a different country in the world. Many of these recipes are veganized based off their omnivore counterparts. While not all of these recipes are a one for one what you’ll find in their country, I hope you’ll still find them delicious!

Vegan Chapati

Ingredients

  • 2 cups All Purpose Flour, plus more for dusting as needed

  • 1 cup Cold Water

  • 1 teaspoon Salt

  • Vegetable Oil, as needed

Directions

  • Mix flour with salt until will incorporated.
  • Add water to flour and salt mixture, mix until it forms a dough. Knead for 2 to 5 minutes. Add small amounts of water or flour as needed if the dough is too wet or dry. Dough should be sticky but semi firm. Set aside and allow dough to rest for at least 20 minutes, perhaps while prepping githeri (optional).
  • Cut dough into 8 equal parts. Roll dough into equal sized balls.
  • Sprinkle extra flour on working surface. Take one of the balls of dough and use rolling pin to flatten into 2 millimeter thick circle. Brush the top of the dough circle with vegetable oil. Repeat with each ball of dough until complete.
  • Take one of the circles and roll into a thin, long cylinder. Once rolled, spiral it upon itself, much like you would a cinnamon roll (see photo above). Repeat until you complete will the remaining dough.
  • Take one of the dough spirals and use rolling pin to again flatten into 2 millimeter thick circle. Repeat with remaining spirals until complete.
  • Heat a pan over medium high heat. Once up to temperature coat pan very lightly with vegetable oil. Add one piece of dough to the pan. Cook until top of dough doesn’t look translucent. Flip, then cook until bottom looks golden brown and fully cooked. Dough may have some dark spots but that’s ok. Remove from heat and repeat with remaining dough.
  • Serve dough hot with githeri (optional) or by itself!
