Banana Fritters (Week 56, Djibouti)

This recipe is a part of my Global Vegan Challenge where each week I research and develop a recipe from a different country in the world. Many of these recipes are veganized based off their omnivore counterparts. While not all of these recipes are a one for one what you’ll find in their country, I hope you’ll still find them delicious!


Recipe Notes

  • If your batter is too liquidy, you may need to add more flour. start by adding a tablespoon at at time until you achieve your desired thickness.
  • If your fritters are sticking to the pan it may be too hot. Turn the heat down and allow them to cook longer to prevent sticking. If you have a non-stick pan that should also help mitigate this issue.

Vegan Banana Fritters

Ingredients

  • 5 Bananas, ripe

  • 3/4 cups Flour

  • 1/2 cup Water

  • 1/4 cup Sugar

  • 1/2 teaspoon Vanilla Extract

  • 1/2 teaspoon Cinnamon

  • 1/4 teaspoon Salt

  • 1/8 teaspoon Nutmeg

  • Vegetable Oil, as needed

Directions

  • Get a large bowl and completely mash 5 bananas. Add vanilla extract and water. Mix and set aside.
  • In another bowl add flour, sugar, cinnamon, nutmeg, salt, and mix well.
  • Once dry ingredients are mixed add to the bowl of mashed bananas. Mix until smooth (some clumps are ok). Add additional flour and water as needed to achieve a slightly thicker than pancake texture.
  • Heat up a pan on medium low heat. Once up to temperature add vegetable oil to coat (I used about 2 tablespoons). Add about 1/4 cup batter to pan and cook for approximately 2 minutes or until the bottom turns golden brown. Flip and allow to cook for another minute or two on the other side. Remove from heat and reapply oil as needed for the next fritter. Repeat until all batter is used up.
  • Enjoy fritters immediately hot. You can serve with sliced bananas as a garnish, or top with powdered sugar.
